Samantha SheCoox

Hi! I’m Samantha—vegan foodie, full-time student, and one-half of the team behind Shecoox. The other half? That’s Mia, my best friend, roommate, and kitchen co-pilot. We met in college, bonded over a shared love of avocado toast, and haven’t stopped cooking (or laughing) since.

What started as classmates became friendship, then roommateship, and now this blog. We’re both passionate about plant-based living and wanted a place to share our favorite vegan recipes with people just like us.

How it Began

Mia & Samantha the founders of She Coox are Cooking

The idea came to life one night over lentil curry and too much green tea. Mia and I were talking about how tough it was to find fun, relatable vegan recipes online. Everything either felt too fancy or too bland.
So, I said, “Why don’t we start our own blog?” and Mia said, “Let’s call it Shecoox.”
We had no idea what we were doing, but we grabbed our aprons, opened a shared Google Doc, and just started. Every recipe here has been tested in our tiny college kitchen—some flopped, most succeeded, and all taught us something.

Our Other Passion

Outside the kitchen, yoga keeps us grounded—literally. What started as a way to manage study stress turned into a shared love. Now it’s part of our daily rhythm.

We roll out our mats in the living room, light a candle, and move through each flow together. Sometimes we talk, sometimes we don’t. But in those quiet moments—between breath and stretch—I feel most connected to myself, and to her. It’s where peace and creativity meet, and where I often find new inspiration for the recipes we share.
