  • 2 ⅔ cups pumpkin (cubed, fresh or canned puree)
  • ⅔ cups starchy potato (cubed, Russet or Yukon Gold)
  • ½ teaspoon salt
  • ¾ cup all-purpose flour (or gluten-free flour substitute)
  • 2 tablespoons vegan butter (or olive oil)
  • 2 teaspoons fresh sage, densely packed (or 1 teaspoon dried sage)
  • Optional: Dash of nutmeg or cinnamon, crunchy nuts or seeds for topping

Instructions

  1. Peel, cube, and steam the pumpkin and potato until fork-tender (15–20 minutes). Drain and cool.
  2. Mash the pumpkin and potato until smooth with no lumps.
  3. Slowly incorporate flour and salt, starting with half the flour and mixing until combined. Add more gradually until a soft, slightly sticky dough forms.
  4. Turn dough onto a floured surface and knead lightly for 1 minute. Do not over-knead.
  5. Divide the dough into 4 portions. Roll each portion into a rope about 1/2 inch thick. Cut into 1-inch pieces.
  6. Press each piece gently with the back of a fork or thumb to create ridges.
  7. Bring a large pot of salted water to a boil. Drop gnocchi in carefully. Cook until they float to the surface (about 2 minutes), then cook for an additional 1–2 minutes. Remove with a slotted spoon.
  8. In a skillet, melt vegan butter over medium heat. Add sage and sizzle for 1–2 minutes until fragrant.
  9. Add cooked gnocchi to the skillet and toss in sage butter. Sauté until lightly golden. Serve warm.

Notes

  • For convenience, use canned pumpkin instead of fresh.
  • Sweet potatoes can be substituted for pumpkin for a sweeter flavor.
  • Do not over-knead the dough to keep the gnocchi light and tender.
  • You can find pre-made vegan pumpkin gnocchi in some grocery stores if short on time.
