- 2 ⅔ cups pumpkin (cubed, fresh or canned puree)
- ⅔ cups starchy potato (cubed, Russet or Yukon Gold)
- ½ teaspoon salt
- ¾ cup all-purpose flour (or gluten-free flour substitute)
- 2 tablespoons vegan butter (or olive oil)
- 2 teaspoons fresh sage, densely packed (or 1 teaspoon dried sage)
- Optional: Dash of nutmeg or cinnamon, crunchy nuts or seeds for topping
Instructions
- Peel, cube, and steam the pumpkin and potato until fork-tender (15–20 minutes). Drain and cool.
- Mash the pumpkin and potato until smooth with no lumps.
- Slowly incorporate flour and salt, starting with half the flour and mixing until combined. Add more gradually until a soft, slightly sticky dough forms.
- Turn dough onto a floured surface and knead lightly for 1 minute. Do not over-knead.
- Divide the dough into 4 portions. Roll each portion into a rope about 1/2 inch thick. Cut into 1-inch pieces.
- Press each piece gently with the back of a fork or thumb to create ridges.
- Bring a large pot of salted water to a boil. Drop gnocchi in carefully. Cook until they float to the surface (about 2 minutes), then cook for an additional 1–2 minutes. Remove with a slotted spoon.
- In a skillet, melt vegan butter over medium heat. Add sage and sizzle for 1–2 minutes until fragrant.
- Add cooked gnocchi to the skillet and toss in sage butter. Sauté until lightly golden. Serve warm.
Notes
- For convenience, use canned pumpkin instead of fresh.
- Sweet potatoes can be substituted for pumpkin for a sweeter flavor.
- Do not over-knead the dough to keep the gnocchi light and tender.
- You can find pre-made vegan pumpkin gnocchi in some grocery stores if short on time.
- Enhance flavor with spices like nutmeg or cinnamon, or add crunchy nuts/seeds for texture.
