The Best Gluten Free Vegan Banana Bread

  • 1 tbsp lemon juice
  • 115 g vegan butter, melted and cooled
  • 150 g light brown sugar
  • 40 g unsweetened plain or Greek-style vegan yogurt
  • ½ tsp vanilla bean paste or 1 tsp vanilla extract
  • 240 g plain gluten-free flour blend
  • 2 tsp baking powder
  • ¾ tsp baking soda
  • ½ tsp xanthan gum
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 90120 g toasted pecans, chopped (optional)
  • Optional: dried fruits (raisins, cranberries, chopped dates), dark chocolate chips, chia seeds, or flaxseeds

Instructions

  1. Preheat your oven to 375°F (190°C) and position the rack in the middle.
  2. Line a 2lb (900g) loaf tin with parchment paper.
  3. Mash the bananas in a large bowl until smooth and mix in the lemon juice.
  4. Add the melted vegan butter, brown sugar, vegan yogurt, and vanilla. Whisk until well combined.
  5. In a separate bowl, whisk together the gluten-free flour blend, baking powder, baking soda, xanthan gum, salt, cinnamon, and nutmeg.
  6. Gradually add the dry ingredients to the wet mixture, whisking gently until smooth. Do not overmix.
  7. Fold in the toasted pecans and any optional ingredients, if using.
  8. Pour the batter into the prepared loaf tin and smooth the top.
  9. Bake for 1 hour to 1 hour and 10 minutes, until a toothpick inserted in the center comes out clean. Cover loosely with foil if the top browns too quickly.
  10. Cool in the tin for 10 minutes, then transfer to a wire rack to cool completely before slicing.
