- 3 medium bananas, finely mashed
- 1 tbsp lemon juice
- 115 g vegan butter, melted and cooled
- 150 g light brown sugar
- 40 g unsweetened plain or Greek-style vegan yogurt
- ½ tsp vanilla bean paste or 1 tsp vanilla extract
- 240 g plain gluten-free flour blend
- 2 tsp baking powder
- ¾ tsp baking soda
- ½ tsp xanthan gum
- ½ tsp salt
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- 90–120 g toasted pecans, chopped (optional)
- Optional: dried fruits (raisins, cranberries, chopped dates), dark chocolate chips, chia seeds, or flaxseeds
Instructions
- Preheat your oven to 375°F (190°C) and position the rack in the middle.
- Line a 2lb (900g) loaf tin with parchment paper.
- Mash the bananas in a large bowl until smooth and mix in the lemon juice.
- Add the melted vegan butter, brown sugar, vegan yogurt, and vanilla. Whisk until well combined.
- In a separate bowl, whisk together the gluten-free flour blend, baking powder, baking soda, xanthan gum, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet mixture, whisking gently until smooth. Do not overmix.
- Fold in the toasted pecans and any optional ingredients, if using.
- Pour the batter into the prepared loaf tin and smooth the top.
- Bake for 1 hour to 1 hour and 10 minutes, until a toothpick inserted in the center comes out clean. Cover loosely with foil if the top browns too quickly.
- Cool in the tin for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- Use very ripe bananas for the best sweetness and moisture.
- Don’t overmix the batter to maintain a tender texture.
- If your gluten-free flour blend doesn’t contain xanthan gum, make sure to add it.
- This bread freezes well; wrap tightly and store for up to 3 months.
- Customize with nuts, seeds, chocolate, or dried fruit for extra flavor and texture.
