- 2 1⁄2 cups all-purpose plain flour
- 1 cup packed brown sugar

- 1 medium-sized apple, grated or chopped
- 1 cup dairy-free milk

- 1 tablespoon apple cider vinegar
- 1 teaspoon vanilla extract

- 1/4 cup vegan cream cheese
- 1/2 cup powdered sugar
- Optional Caramelized Apples:
- 2 tablespoons vegan butter
- 1 medium-sized apple, cubed
- 2 tablespoons packed brown sugar
Instructions
- Preheat oven to 180°C (350°F). Grease or line an 8-inch loaf pan with parchment paper.
- In a large bowl, mix flour, brown sugar, baking powder, baking soda, cinnamon, and salt until well combined.
- In a separate bowl, whisk together dairy-free milk, oil, apple cider vinegar, and vanilla extract. Stir in the grated or chopped apple.
- Pour the wet mixture into the dry ingredients and gently mix until just combined—do not overmix.
- Transfer the batter to the prepared loaf pan and spread it evenly.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Optional Icing: Mix vegan cream cheese and powdered sugar until smooth. Add a splash of plant milk if needed to loosen the texture.
- Optional Caramelized Apples: In a pan over medium-low heat, cook the cubed apple in vegan butter until softened. Add brown sugar and cook until caramelized. Add a splash of water if needed.
- Once the bread is cooled, spread cream cheese icing on top and finish with caramelized apples.
Notes
- You can substitute brown sugar with granulated sugar, though the flavor will be less rich.
- Any plant-based milk works—almond, oat, soy, etc.
- Skip the icing and topping for a faster, lighter version.
- This bread freezes well for up to 2 months—just wrap it tightly.
