  • 1/4 cup vegan cream cheese
  • 1/2 cup powdered sugar
  • Optional Caramelized Apples:
  • 2 tablespoons vegan butter
  • 1 medium-sized apple, cubed
  • 2 tablespoons packed brown sugar

Instructions

  1. Preheat oven to 180°C (350°F). Grease or line an 8-inch loaf pan with parchment paper.
  2. In a large bowl, mix flour, brown sugar, baking powder, baking soda, cinnamon, and salt until well combined.
  3. In a separate bowl, whisk together dairy-free milk, oil, apple cider vinegar, and vanilla extract. Stir in the grated or chopped apple.
  4. Pour the wet mixture into the dry ingredients and gently mix until just combined—do not overmix.
  5. Transfer the batter to the prepared loaf pan and spread it evenly.
  6. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Optional Icing: Mix vegan cream cheese and powdered sugar until smooth. Add a splash of plant milk if needed to loosen the texture.
  9. Optional Caramelized Apples: In a pan over medium-low heat, cook the cubed apple in vegan butter until softened. Add brown sugar and cook until caramelized. Add a splash of water if needed.
  10. Once the bread is cooled, spread cream cheese icing on top and finish with caramelized apples.

Notes

  • You can substitute brown sugar with granulated sugar, though the flavor will be less rich.
  • Any plant-based milk works—almond, oat, soy, etc.
  • Skip the icing and topping for a faster, lighter version.
