- 4 cups day-old multi-grain bread, cut into 1-inch cubes
- 2 tablespoons vegan butter
- 2 tablespoons brown sugar or maple syrup
- 6 tablespoons Just Egg or 2 regular eggs
- 1 cup plant-based milk (almond, oat, soy, or coconut)
- 1 1/2 teaspoons vanilla extract
- 1 tablespoon orange zest
- 1 (10 oz) bag mixed frozen berries, defrosted and drained
- Powdered sugar or maple syrup, for serving
- Optional: Chopped walnuts or pecans
- Optional: A sprinkle of cinnamon
Instructions
- Cut day-old bread into 1-inch cubes and set aside.
- In a saucepan over medium heat, melt vegan butter. Add brown sugar or maple syrup and stir until a syrup forms. Let cool slightly.
- In a large mixing bowl, whisk together Just Egg (or eggs), plant-based milk, vanilla extract, and orange zest.
- Add the cooled butter-sugar mixture to the egg mixture and whisk to combine.
- Gently fold in bread cubes and drained berries until everything is evenly coated.
- Transfer mixture into a lightly greased 2-quart baking dish. Press down gently. Cover and refrigerate for at least 2 hours or overnight.
- Preheat oven to 375°F (190°C). Let the dish come to room temperature for 10–15 minutes before baking.
- Bake uncovered for 20–30 minutes, until golden brown and slightly set in the center.
- Allow to cool slightly, then top with powdered sugar or maple syrup and serve.
Notes
- Use any sturdy bread like sourdough or brioche if multigrain isn’t available.
- To make it gluten-free, use gluten-free bread.
- Sweeteners like agave syrup can be used as a substitute for brown sugar or maple syrup.
- For a more indulgent flavor, add a touch of cinnamon or nut butter drizzle before serving.
