This easy and delicious Vegan Berry French Toast Casserole is the perfect make-ahead breakfast or brunch dish. Made with hearty multigrain bread, plant-based milk, and a bright burst of mixed berries, it’s a crowd-pleaser that’s both comforting and wholesome.

  • 4 cups day-old multi-grain bread, cut into 1-inch cubes
  • 2 tablespoons vegan butter
  • 2 tablespoons brown sugar or maple syrup
  • 6 tablespoons Just Egg or 2 regular eggs
  • 1 cup plant-based milk (almond, oat, soy, or coconut)
  • 1 1/2 teaspoons vanilla extract
  • 1 tablespoon orange zest
  • 1 (10 oz) bag mixed frozen berries, defrosted and drained
  • Powdered sugar or maple syrup, for serving
  • Optional: Chopped walnuts or pecans
  • Optional: A sprinkle of cinnamon

Instructions

  1. Cut day-old bread into 1-inch cubes and set aside.
  2. In a saucepan over medium heat, melt vegan butter. Add brown sugar or maple syrup and stir until a syrup forms. Let cool slightly.
  3. In a large mixing bowl, whisk together Just Egg (or eggs), plant-based milk, vanilla extract, and orange zest.
  4. Add the cooled butter-sugar mixture to the egg mixture and whisk to combine.
  5. Gently fold in bread cubes and drained berries until everything is evenly coated.
  6. Transfer mixture into a lightly greased 2-quart baking dish. Press down gently. Cover and refrigerate for at least 2 hours or overnight.
  7. Preheat oven to 375°F (190°C). Let the dish come to room temperature for 10–15 minutes before baking.
  8. Bake uncovered for 20–30 minutes, until golden brown and slightly set in the center.
  9. Allow to cool slightly, then top with powdered sugar or maple syrup and serve.

Notes

  • Use any sturdy bread like sourdough or brioche if multigrain isn’t available.
  • To make it gluten-free, use gluten-free bread.
  • Sweeteners like agave syrup can be used as a substitute for brown sugar or maple syrup.
  • For a more indulgent flavor, add a touch of cinnamon or nut butter drizzle before serving.
