  • 1 cup (100g) blueberries (fresh or frozen)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon (optional)

Instructions

  1. Preheat oven: Set to 350°F (175°C) and lightly grease a 9×5-inch loaf pan.
  2. Mix dry ingredients: In a medium bowl, whisk together oats, flour, sugar, baking powder, baking soda, salt, and cinnamon (if using).
  3. Mash bananas: In a separate bowl, mash 2–3 ripe bananas until smooth.
  4. Combine wet ingredients: Add mashed bananas, almond milk, oil or applesauce, and vanilla extract to the dry ingredients. Mix until just combined—do not overmix.
  5. Fold in blueberries: Gently fold in blueberries. If using frozen, no need to thaw.
  6. Transfer to pan: Pour batter into the prepared loaf pan. Smooth the top. Sprinkle extra blueberries or oats if desired.
  7. Bake: Bake for 50–55 minutes, rotating halfway through. The top should be golden and a toothpick should come out clean.
  8. Cool: Let cool in the pan for 15 minutes. Then remove and transfer to a wire rack to cool completely before slicing.
