- 1¼ cups old-fashioned oats (or quick oats)
- 1¼ cups flour (spelt, all-purpose, or whole wheat)
- ⅓ cup sugar (turbinado, coconut, or pure cane)
- 2 tsp baking powder
- ½ tsp baking soda
- Generous pinch of salt
- 2–3 ripe bananas, mashed (about 1 to 1¼ cups)
- ¼ cup unsweetened almond milk
- ¼ cup grapeseed or light olive oil (or applesauce for oil-free)
- 1 cup (100g) blueberries (fresh or frozen)
- 1 tsp vanilla extract
- 1 tsp cinnamon (optional)

Substitutions & Shortcuts
- Use 2½ cups flour if skipping oats (not recommended)
- Replace flour with a gluten-free blend for GF option
- Swap bananas for unsweetened applesauce 1:1 if needed
Instructions
- Preheat oven: Set to 350°F (175°C) and lightly grease a 9×5-inch loaf pan.
- Mix dry ingredients: In a medium bowl, whisk together oats, flour, sugar, baking powder, baking soda, salt, and cinnamon (if using).
- Mash bananas: In a separate bowl, mash 2–3 ripe bananas until smooth.
- Combine wet ingredients: Add mashed bananas, almond milk, oil or applesauce, and vanilla extract to the dry ingredients. Mix until just combined—do not overmix.
- Fold in blueberries: Gently fold in blueberries. If using frozen, no need to thaw.
- Transfer to pan: Pour batter into the prepared loaf pan. Smooth the top. Sprinkle extra blueberries or oats if desired.
- Bake: Bake for 50–55 minutes, rotating halfway through. The top should be golden and a toothpick should come out clean.
- Cool: Let cool in the pan for 15 minutes. Then remove and transfer to a wire rack to cool completely before slicing.
Notes
- Using quick oats will result in a softer texture; old-fashioned oats offer more chew.
- If your bananas are very ripe, you can reduce the sugar slightly.
- For a sugar-free version, use mashed dates or monk fruit sweetener as a substitute.
- This loaf freezes well—wrap slices individually for easy grab-and-go breakfasts.
