  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup chia seeds
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon sea salt
  • 3/4 cup unsweetened almond milk
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract
  • 1/4 cup melted coconut oil
  • 1/4 cup pure maple syrup
  • Sliced banana and chia seeds for garnish
  • Pure maple syrup for serving

Instructions

  1. Preheat the oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
  2. In a small bowl, combine almond milk and apple cider vinegar. Stir and let sit for 5–10 minutes to create vegan buttermilk.
  3. In a large mixing bowl, mash the bananas until smooth.
  4. Add brown sugar to the bananas and mix well.
  5. Stir in melted coconut oil and vanilla extract until blended.
  6. Pour in the vegan buttermilk and mix until smooth.
  7. In a separate bowl, whisk together the flour, baking powder, baking soda, chia seeds, cinnamon, nutmeg, allspice, and salt.
  8. Gradually fold the dry ingredients into the wet mixture using a spatula, being careful not to overmix.
  9. Fold in the maple syrup until fully incorporated.
  10. Transfer the batter into the prepared loaf pan and top with sliced banana and a sprinkle of chia seeds.
  11. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  12. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  13. Slice and serve with an optional drizzle of pure maple syrup and your favorite toppings.
