- 4 very ripe bananas, mashed
- 2 cups organic all-purpose flour (or 1 cup all-purpose + 1 cup bread flour)
- 1/2 cup organic brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda

- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1/4 teaspoon sea salt
- 3/4 cup unsweetened almond milk
- 1 tablespoon apple cider vinegar
- 1 teaspoon vanilla extract
- 1/4 cup melted coconut oil
- 1/4 cup pure maple syrup
- Sliced banana and chia seeds for garnish
- Pure maple syrup for serving
Instructions
- Preheat the oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
- In a small bowl, combine almond milk and apple cider vinegar. Stir and let sit for 5–10 minutes to create vegan buttermilk.
- In a large mixing bowl, mash the bananas until smooth.
- Add brown sugar to the bananas and mix well.
- Stir in melted coconut oil and vanilla extract until blended.
- Pour in the vegan buttermilk and mix until smooth.
- In a separate bowl, whisk together the flour, baking powder, baking soda, chia seeds, cinnamon, nutmeg, allspice, and salt.
- Gradually fold the dry ingredients into the wet mixture using a spatula, being careful not to overmix.
- Fold in the maple syrup until fully incorporated.
- Transfer the batter into the prepared loaf pan and top with sliced banana and a sprinkle of chia seeds.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and serve with an optional drizzle of pure maple syrup and your favorite toppings.
Notes
- Use bananas with brown spots for maximum sweetness and moisture.
- Don’t overmix the batter—some lumps are okay and help keep the bread tender.
- Let the loaf cool fully before slicing to allow it to set properly.
- Try different plant-based milks like oat or soy if almond isn’t available.
