  • 1 1/2 cups mashed overripe bananas (about 4 medium/large bananas)
  • 1/2 cup creamy nut butter (peanut or almond)
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 3/4 cup vegan chocolate chips (or chopped nuts or dried cranberries)

Instructions

  1. Preheat oven to 350ºF (175ºC). Line a 9×5 inch loaf pan with parchment paper, leaving overhang on all sides.
  2. In a medium bowl, whisk together spelt flour, baking powder, baking soda, ground flaxseed, cinnamon, nutmeg, and sea salt until well combined.
  3. In another bowl, mash bananas until smooth. Stir in nut butter, maple syrup, and vanilla extract until evenly mixed.
  4. Pour banana mixture into dry ingredients. Gently fold with a spatula until just combined; some lumps are fine.
  5. Fold in vegan chocolate chips or your choice of nuts/dried fruit evenly.
  6. Transfer batter to the prepared loaf pan and smooth the top.
  7. Bake for 45-50 minutes until golden brown and a toothpick inserted in the center comes out clean.
  8. Let the bread cool in the pan for 15 minutes, then use the parchment overhang to lift it onto a wire rack. Cool completely before slicing.
