- 2 cups spelt flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 2 tablespoons ground flaxseed
- 3/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon sea salt
- 1 1/2 cups mashed overripe bananas (about 4 medium/large bananas)
- 1/2 cup creamy nut butter (peanut or almond)
- 1/3 cup maple syrup
- 1 teaspoon vanilla extract
- 3/4 cup vegan chocolate chips (or chopped nuts or dried cranberries)
Instructions
- Preheat oven to 350ºF (175ºC). Line a 9×5 inch loaf pan with parchment paper, leaving overhang on all sides.
- In a medium bowl, whisk together spelt flour, baking powder, baking soda, ground flaxseed, cinnamon, nutmeg, and sea salt until well combined.
- In another bowl, mash bananas until smooth. Stir in nut butter, maple syrup, and vanilla extract until evenly mixed.
- Pour banana mixture into dry ingredients. Gently fold with a spatula until just combined; some lumps are fine.
- Fold in vegan chocolate chips or your choice of nuts/dried fruit evenly.
- Transfer batter to the prepared loaf pan and smooth the top.
- Bake for 45-50 minutes until golden brown and a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 15 minutes, then use the parchment overhang to lift it onto a wire rack. Cool completely before slicing.
Notes
- Use very ripe bananas with brown spots for best sweetness and moisture.
- Do not overmix batter to keep bread tender and fluffy.
- Store cooled bread wrapped at room temperature for up to 3 days or freeze for longer storage.
